After leaving her appointment, I was inspired to continue to make positive changes to our diets to accommodate her diabetes. Her diabetes stays much more under control when we limit the carbohydrates and keep the meals full of lean protein and fresh veggies.
Here's what we'll be eating this week:
Monday - Leftovers - we've got lots from the weekend.
Tuesday - Steak and cheese quesadillas
Wednesday - TBD - Hubs' birthday!!!
Thursday - Deep dish taco pie with a side salad.
Friday - Halloween! We'll get take out after trick-or-treating or we'll make this fun treat.
Saturday - Grilled chicken kebabs with a side of rice
Sunday - Spicy veggie chili with cornbread
