Menu Plan Monday :: 3.16.2015

I'm trying to keep the meal plan fairly simple this week. I have several daytime meetings, and we have several after school appointments, including the orthodontist and a gymnastics evaluation. I want to keep the meal prep to 30 minutes or less, if I can.


Here's what we'll be eating this week:

Monday - French Onion Soup

Tuesday - Corned beef and cabbage, boiled potatoes, and carrots

Wednesday - Light loaded baked potato soup

Thursday - Lime chicken tacos

Friday - Ravioli with brow butter and sage

Saturday - Take out (We'll be attending a media preview at the Liberty Science Center during the day, and I'll be at a gift auction in the evening).

Sunday - Chicken saltimbocca
