I'm coming off a celebratory weekend. I celebrated my birthday on Friday, so it's been a weekend of dinners out or The Hubs has cooked. But this week it's back to reality. I'm taking it a bit easy on myself this week. The dinners will be good, but they will be easy to prepare, and who knows, I may even enlist the help of the kids!
Here's what we'll be eating this week.
Monday - Slow cooker minestrone soup
Tuesday - Meatball parmigiana sandwiches
Wednesday - Vegetarian stuffed peppers
Thursday - Chicken stir fry with rice
Friday - Dinner out
Saturday - Make your own pizza (our Saturday night winter tradition)
Sunday - Green chile chili
