Menu Plan Monday :: 8.1.2016

Wow. I had to do a double take when I typed the date in the title of this post. August already? Say it isn't so. This summer is flying by. :-(
One of the best things about August is that it's tomato season here in New Jersey. The crops are at their peak, and the tomatoes are the sweetest! I could eat them like apples. You'll definitely see tomatoes all over the place in the next few menu plans.

Here's what's on our plates this week:

Monday - Tomato basil pasta. This is one of my favorite summer recipes. It's so tasty and so simple, which is perfect after you've spent the day at the pool, beach, or sightseeing. And it's so inexpensive to make. It'll easily cost you less than $10 to feed your family.

Tuesday - Teriyaki chicken foil packets. Any one-pot meal is a friend of mine. These foil packs aren't exactly prepared in a pot, but they can certainly be classified as one-pot. They are super versatile, add the vegetables (or even pineapple chunks) that you prefer, and it's a crowd-pleaser!

Wednesday - Greek tortellini salad. Greek salads are one of our favorite meals. I load them with lots of Kalamata olives because why not?? Tortellini elevates this pasta salad and makes it perfect for a meal rather than a starter. You could also add grilled chicken for some added protein.

Thursday - Shrimp pineapple kabobs served over rice. Trying this recipe for the first time. I usually make chicken and pineapple kabobs, but I wanted to change it up, and this recipe looks delish! I may add zucchini to it to include a veggie.

Friday - Make your own pizza. I picked up a ciabatta flatbread yesterday at Trader Joe's. We are going to score it and each of us will top our own quarter. I have pizza sauce, shredded mozzarella, fresh mozzarella, arugula, prosciutto, pepperoni, green peppers, caramelized onions, and more.

Saturday - We will be in Washington, D.C. overnight. We are considering this restaurant for dinner.

Sunday - Grilled Balsamic steak with tomatoes and arugula. I met Gina the creator of Skinnytaste several years ago at a blogging conference, and I've been obsessed with her recipes ever since. This one is AWESOME!!
