Menu Plan Monday :: 8.29.2016

We are in the home stretch of summer vacation this week. One last hurrah before my daughters head back to school on September 7th. My sister Brenda is visiting us this week, and we are recovering from a week long vacation in Rehoboth Beach, Delaware. So, please, bear with me this week. It's going to be a tough one. Between trying to ease back into the swing of things and gearing up for school, you may need to send in reinforcements!!

Here's what's on the menu this week.

Monday - Caprese chicken with a big old house salad. Change up your grilled chicken by adding tomatoes, basil, and fresh mozzerella. You'll never have plain grilled chicken again!


Tuesday - Bang bang shrimp pasta. This recipe was inspired by Bonefish Grill's signature shrimp dish, and it's delish! Think spicy shrimp scampi if you can't imagine what this will taste like.


Wednesday - Bowtie chicken Caesar salad. How can you make a Caesar salad even better? Add pasta to it, of course.


ThursdayPerfect potato soup. The weather is supposed to be rainy, so let's have soup! It's been a while since I've made soup, and I've had a craving for my fave potato soup.


Friday - Take out.

Saturday - Chicken enchiladas. This has to be one of the easiest and tastiest meals to prepare. I always buy a rotisserie chicken to make it even easier. I always make a few plain cheese enchiladas for those who may not prefer chicken. Just be sure to put toothpicks in the cheese ones so you know which ones they are.


Sunday - Crock-Pot pulled chicken sliders. If football is on the agenda today, then you'll want to make this. Super easy. Throw the ingredients in to the slow cooker and walk away!
