Menu Plan Monday :: 10.3.2016

I am getting a very late start to menu planning today. My youngest woke up with a very bad cold, so today's priority has been her. We've been to the pediatrician who has recommended a treatment plan, and now we are off and running with a nebulizer and an antibiotic. Oh, the joys of the kids being back in school.

But, no matter what we have going on, we need to eat, right? So, here's what's cookin' this week:

Monday - Meatball Parmesan subs (using leftover meatballs from last night's dinner).

TuesdayTeriyaki chicken foil packets. Any one-pot meal is a friend of mine. These foil packs aren't exactly prepared in a pot, but they can certainly be classified as one-pot. They are super versatile, add the vegetables (or even pineapple chunks) that you prefer, and it's a crowd-pleaser!

WednesdayBowtie chicken Caesar salad. This is a recipe that I pinned at the beginning of summer and somehow had forgotten about it. Not sure how that happened because this recipe seriously looking amazing...and kid-friendly!!

ThursdayBang bang shrimp pasta. This recipe was inspired by Bonefish Grill's signature shrimp dish, and it's delish! Think spicy shrimp scampi if you can't imagine what this will taste like.

Friday - Dinner out

Saturday - Date night!

Sunday - Ultimate nachos
We have the JDRF One Walk earlier in the day and usually go out for lunch afterwards. Since we aren't incredibly hungry later in the evening, we usually throw something light together such as these nachos.

To satisfy your sweet tooth, why not whip up a apple galette? This is one of my favorite desserts. Since it's prime apple season, why not? Don't forget the whipped cream!!
