Menu Plan Monday ~ 1.20.14

Getting my menu plan off to a late start today. We spent the weekend in Hershey visiting my sister and her family, and just returning home this evening. Snow is in the forecast this week, so I better be prepared with some ideas for dinner. So, here's my menu plan...better late than never...

MONDAY - Take out pizza (Taking the easy way out on a holiday)

TUESDAY - Southwestern style stuffed peppers

WEDNESDAY - Broccoli cheese soup with a side salad

THURSDAY - Slow cooker chicken enchiladas

FRIDAY - Dinner out

SATURDAY -  I'm attending a gift auction with girlfriends so the Hubs is in charge of dinner.

SUNDAY - Beef roast in the slow cooker with potatoes and carrots (my own recipe).
