Kicking off our week with a meal plan, of course. I've managed to stick fairly closely to our meal plans so far this year. If you've never done any meal planning, I highly encourage you to try it. Meal planning has saved my evening sanity and has kept me organized.

Monday - Chicken stir-fry
Tuesday - Cherry tomato spaghetti
Wednesday - Lemon chicken Romano with rice and roasted asparagus
Thursday - Chicken fajita stuffed peppers
Friday - Dinner out
Saturday - French onion soup with a side salad
Sunday - Ravioli with sauteed asparagus and walnuts (I use pine nuts instead of walnuts), salad, and garlic bread.
