Cheers To Groundhog Day Cocktails

Groundhog Day may not seem like an occasion worthy of celebrating. But trust me, if I hear there will be six more weeks of winter, I'll be in need of a cocktail. On the other hand, if I hear spring is just around the corner, I'll want a cocktail to celebrate the good news.

Whether Punxsutawney Phil sees his shadow or not, these fun and fruity, warm-weather inspired cocktails are perfect for celebrating the outcome, good or bad.

Shadow Spritzer


Ingredients
1 Bottle of Strawberry Lemonade Sparkling Ice
Dash of lime juice
1 ½ oz. vodka
Fresh raspberries for garnish
1 lemon, thinly sliced
Crushed ice


Preparation

1. In a cocktail shaker, combine Strawberry Lemonade Sparkling Ice, vodka and lime juice
2. Stir in crushed ice
3. Stir and pour in two glasses
4. Garnish each glass with fresh raspberries and lemons


Phil Connors Collins

Ingredients
4 oz. Lemonade Sparkling Ice

1 ½ oz. vodka
Cucumber and lemon slices
Preparation
1. Muddle a few cucumber sliced with vodka
2. Strain and pour into a chilled glass over ice
3. Top with Lemonade Sparkling Ice
4. Garnish with lemon and cucumber slices

Punxsatawney Punch

Ingredients
4 oz. Pomegranate Blueberry Sparkling Ice
1 ½ oz. pomegranate vodka
Splash of freshly squeezed lemon
Blueberries
Rosemary sprig
Ice

Directions
1. Pour vodka and lemon juice over ice and stir
2. Top with Pomegranate Blueberry Sparkling Ice
3. Stir gently to combine ingredients
4. Garnish with fresh or frozen blueberries and a sprig of rosemary
