Menu Plan Monday ~ 1.14.13

It's amazing how much smoother my days and weeks go when I have a meal plan in place. Sheesh! Who would've guessed that a little bit of organization would go such a loooong way?

Most weeks I veer off the plan when a new meal idea or recipe comes into my head. Last week, I stuck to my menu plan, but jotted down new recipes for future weeks. Meal time was so much more seamless.

Here's the plan for this week.

MONDAY - Roasted garlic and white bean chili

TUESDAY - Mexican lasagna. This was on last week's meal plan, but I didn't make it because I ended up chaperoning a Girl Scout event for Harper. Instead, the Hubs made this recipe for him and Emma. They loved it!

WEDNESDAY - Meatball Soup (This recipe is from an older Williams-Sonoma cookbook. I couldn't find the recipe online, but here's a link to the cookbook.)

THURSDAY - Mexican pizza (the Hubs' recipe).

FRIDAY - Hubs is on dinner duty. I'll be at a party at a girlfriend's house.

SATURDAY - The Hubs has plans with his cousin, and the girls and I have plans to do some shopping. We'll grab something to eat while we are out and about.

SUNDAY - Quick meatballs and spaghetti (own recipe).
