Last week I veered off the menu plan once and actually mustered up some courage to venture out to dinner with Harper. I'm not gonna lie. I was a bit nervous about going out to dinner with her and timing her insulin injection and counting her carbs correctly. But we can't stay away from restaurants forever.
So, as I see it, the sooner we get out there, the better we will adjust to and learn from going out to dinner. Both of our experiences eating out last week couldn't have gone smoother.
Here's what we will be eating this week.
Monday - Leftovers from the weekend
Tuesday - Black beans and rice
Wednesday - White bean and bacon soup
Thursday - Meatball tortellini soup
Friday - Dinner out
Saturday - Roasted chicken with roasted potatoes and carrots
Sunday - Hubs is in charge
