Menu Plan Monday :: 1.30.2017

We were supposed to be waking up to a blanket of snow on the ground this morning. It's been a mild winter so far, and I'm certainly not complaining about that. But it is nice to see a little white stuff strewn about once in a while. I like when it's just enough to look pretty but doesn't hinder your plans or driving.

Anyway, enough about the weather. Let's get to this week's meal plan, shall we?

Monday - Baked potato soup. Harper is getting her spacers put in today in preparation for her braces next week, which means we need something that's easy for her to eat. This soup requires little chewing and when it does, it's small chunks of soft potatoes. Plus, the heat from the soup will alleviate some of her soreness.

Tuesday - Chicken bacon ranch tater tots casserole. In an effort to empower the girls to help plan our meals, I tasked them with choosing the meals for a day. Harper chose this casserole, which looks interesting. We like all of the ingredients, but I'm not sure how they'll taste when combined. Stay tuned!

Wednesday - Ravioli with peas and shallots. I always like to have an easy meal midweek, and this one is super simple. A quick chop of the shallot is the most strenuous part of making this meal.

Thursday - Stuffed pepper soup. Since I seem to make stuffed peppers often, I wanted to change it up a bit while sticking to a favorite. This soup is a hearty replacement for stuffed peppers. Serve it with a side salad and crusty rolls.


Friday - Dinner out

Saturday - Sheet pan veggie and chicken stir-fry. Totally judging a book by it's cover on this one. When I saw the pic of this dish, I couldn't resist adding it to this week's meal plan. We love stir-frys and this one looks like a winner!

Sunday - Crispy cheesy chicken schnitzel. We love chicken cutlets. This recipe adds Parrano cheese for a nutty kick. I can just tell that this recipe is going to be a crowd pleaser.
