Tuesday's Tasty Treat: Roasted Tomatoes

With The Hubs being off pasta, rice, and bread during Lent, I've had to get inventive with vegetables. I must say that I can follow a recipe, but I'm not great at throwing together a meal on the fly. I just don't have that creative touch when it comes to food. I rack my brain for ways to add zing to everyday ingredients, but I come up with zip.

So, when I found this recipe in a cookbook, I was excited to try it. I added less salt than the original recipe called for.

Roasted Tomatoes (Serves 4)

Ingredients
4 Roma tomatoes, halved length-wise to make 8 halves
1-1/2 tablespoons olive oil
1/4 tsp. salt
1/2 tsp. dried basil or dried thyme
1/2 tsp. black pepper (I prefer freshly ground)
4 cloves garlic, finely minced

Preparation
1. Preheat oven to 350 degrees Fahrenheit.
2. Place tomatoes, cut side up, on a greased foil-lined baking sheet.
3. Combine olive oil, salt, basil (or thyme), pepper, and garlic.
4. Spoon mixture over tops of tomato halves.
5. Bake for 40 to 50 minutes.
