Homemade Ice Cream Sandwiches

My favorite ice cream treat as a child was an ice cream sandwich. The cookies and the ice cream were the perfect combination. To this day, it's one of my favorite summer treats. But after sitting in a freezer for an unknown amount of time and being wrapped in thin paper, the cookie is always soft and mushy, making this delectable treat a lot less appealing.

The only way to get a crisp crunchy cookie with a soft ice cream center is to make them at home. You choose your  favorite ice cream flavors, and you can have all the sprinkles you want!



HOMEMADE ICE CREAM SANDWICHES

Ingredients*
9 oz. box Nabisco Famous Chocolate Wafers
Ice cream, frozen yogurt, or gelato
Sprinkles or decorator candies

Preparation
1. Take a small scoop of ice cream and place it between 2 cookies. Lightly and carefully smash the cookies down to flatten the ice cream. The cookies are delicate and will break easily, so be gentle.

2. If desired, turn the ice cream sandwich on its side and roll in sprinkles or decorator candies.

3. If preparing ahead, place sandwiches in a container or plastic bag and store in the freezer.

*You can use any cookie you wish, but these are my favorite. They are thin and crunchy. You can find them in your grocery store in the cookie aisle with the Nabisco products. They are hard to spot, so look carefully. They are usually placed either very high on a shelf or very low.

If using gelato, allow it to soften before scooping it.
