Menu Plan Monday :: 2.2.2015

We are switching gears a bit this week with our meal plan. Harper had her quarterly appointment with her endocrinologist on Friday, and he suggested that she cut back on carbohydrates in an effort to get a better handle on her fluctuating blood sugar.

We won't be going carb-free any time soon, but this week's meals are more diabetic-friendly than what we've recently been eating for dinner.




Here's what we'll be eating this week:

Monday - Chicken piccata with rice

Tuesday - Seared chicken with avocado

Wednesday - Veggie tostados

Thursday - Greek salad with garlic knots

Friday - Dinner out

SaturdayHamburger soup

Sunday - Crockpot stuffed peppers
