Is it that time again? Geez! The weeks fly by, and before I know it, it's Sunday afternoon and time to plan the week's menu. Lots of good and easy stuff this week. So, let's just dive right in, shall we?
Here's what's on our plates this week:
Monday - It's Harper's 11th birthday today, so the birthday girl gets to choose where we go for dinner! On a side note, how the heck is my baby eleven years old already?
Tuesday - Garlic oil sauteed pasta with broccoli. I'm moving meatless Monday to Tuesday this week since we have a birthday celebration on Monday. After lots of birthday sweets and treats, I'll be ready for a light pasta meal with a side salad.

Wednesday - Cheesy taco lasagna. I need more easy meals like this one. It's pretty simple. Prep it in a glass dish and bake. Doesn't get much easier than that, does it?

Thursday - Spinach tomato tortellini soup. Easy and comforting are the best combination when it comes to making soup for dinner. I use boxed chicken broth, but if you have homemade, even better!

Friday - Slow cooker pot roast. This is one of those "two birds with one stone" meals. I always make beef and barley vegetable soup using the leftover pot roast. That takes care of one meal for next week's menu plan!

Saturday - Dinner out.
Sunday - Crispy chicken parm with tomatoes and mozzarella. One of the reasons I'm not particularly fond of chicken parm is that it's too saucy. This variation doesn't drench the chicken in sauce but rather places a small portion of sauce on top of the chicken.
