Menu Plan Monday :: 2.6.2017

When I plan our weekly meals, I need to take into account my general schedule, my husband's travel schedule, the kids' after school schedules and activities as well as any special goings on for the week. Today Harper is getting a full set of braces on, so I've had to factor that into the meal equation. Considering her teeth will likely be sore for the first day or so, I'm trying to keep our meals conducive to braces.

Here's what's on our plates this week.

Monday - One pot pizza pasta bake (without the pepperoni). I've made this once before, and it was a big hit. But my oldest wasn't fond of the mini pepperoni topping. So, I am eliminating it this time around.

Tuesday - Southwestern chicken soup. Trying a new soup this week in place of the chicken tortilla soup that I make every few weeks. This one has many of the same ingredients, but uses jarred salsa verde in place of canned diced tomatoes. I'm hoping it's a keeper.

Wednesday - Tuscan chicken and vegetables sheet pan dinner. I've been into sheet pan dinners lately because they are so simple. It's basically simple prep of the ingredients and then throwing them onto the sheet pan to cook.

Thursday - Crispy Tex-Mex chicken strips with Mexican rice. When I saw this recipe for chicken strips, I knew I had to make it. I love recipes that take a mealtime staple and kick it up a notch.

Friday - Dinner out

Saturday - Spaghetti Bolognese. I'm not usually a meat sauce kind of gal, but this recipe is really, really good.

Sunday - Slow cooker chili. Don't you think Sundays in the winter were made for chili? There is nothing easier than walking away from a slow cooker full of delicious ingredients. Come back a few hours later, and it's good to go. This recipe is from my friend Hilary. I love trying new chili recipes, and this is one I pinned a while ago and bookmarked to try.
