Menu Plan Monday :: 3.27.2017

Now that we are a few weeks into lacrosse season, I've gotten smarter about meal planning and preparation. Lacrosse practice pick up and scrimmages do not cooperate with meal time. I've been forced to push back our dinner times. So, I've also had to adjust the menu plan to include easier and quicker meals since I've been starting to make dinner later.

Here's what's on our plates this week:

Monday - Meatball Parmigiana sandwiches (using leftover meatballs from a batch the Hubs made yesterday).

Tuesday - Ground beef tacos. A classic for Taco Tuesday, and also at the request of Harper.

Wednesday - Sheet pan chicken and broccoli. I love the combination of chicken and broccoli, and this one looks like an interesting (and easy) one.


Thursday - Homemade pizza. This is always a house favorite. Everyone loves it because we can customize our toppings to our liking. This is also a great idea for a larger group. You can make your own dough, buy it at the grocery store, or get it from your local pizzeria.


Friday - Dinner out

Saturday - Slow cooker Mexican pot roast. I made this recipe for the first time a few weeks ago, and it was a crowd favorite. I like to make mashed potatoes and throw a few potatoes directly into the crock pot. If you don't like fire-roasted tomatoes, you can always use petite diced tomatoes.


Sunday - Chicken Murphy. This is one of the Hubs' all-time favorite meals. He usually always orders it when we go to our favorite restaurant. But lately, he's been making it at home using his own recipe. The recipe I've linked to is similar to his. This is a great example of easy it is to make your favorite restaurant meals at home.
