We returned from our 10-day Florida vacation yesterday. I have to say...I am ready to get back to a routine. Other than writing one blog post while I was away and doing some social media posting (mostly Instagram and Snapchat), I completely unplugged. And it felt great! I returned feeling rested and relaxed and ready to get back to work. The first item of business: this week's meal plan. After taking two weeks off, I'm ready to dive back in to menu planning.
Here's what's on the menu this week:
Monday - Spinach and white bean soup and a side salad
Wednesday - Asian lettuce wraps
Thursday - Ravioli with sauteed asparagus and walnuts
Friday - Dinner out
Saturday - Mexican stuffed peppers
Sunday - Crock Pot pulled pork sandwiches
