What To Do With All Those Thanksgiving Leftovers

Monday, November 23, 2015
Thanksgiving is my favorite holiday. The over abundance of food makes it impossible not to love Thanksgiving. But what happens when the holiday is over, and you're left with a refrigerator full of leftovers? One can eat only so many turkey sandwiches.

This year I've rounded up some of my favorite recipes for using up Thanksgiving leftovers in creative and delicious ways.

Turkey Tortilla Soup
Chicken tortilla soup is a family favorite around here. I've never thought of using turkey in place of the chicken in this Mexican-inspired soup.

Turkey Pot Pie
This hearty comfort dish filled with peas, carrots, potatoes, celery, and of course, turkey in a creamy sauce will leave your insides warm.

Turkey and Cranberry Chutney Sandwich
Elevate your post-Thanksgiving turkey sandwich with the addition of cranberry chutney, Brie, and arugula.

Maple Sweet Potato Cakes
These potato cakes are a sweet and tasty twist on traditional potato latkes.

Cheesy Mashed Potato Muffins
Load them up or keep them easy, these potato muffins have a creamy center, crispy edge, and ooey gooey cheesy top.

What to do with all the leftover breads and rolls? Easy. Make homemade croutons. They are super simple and require just a few ingredients and a few steps.

Pumpkin Pie Smoothie
If you have an extra can of pumpkin puree hanging around, it takes only minutes to turn it into a delicious and satisfying breakfast.

What's your favorite way to use up your Thanksgiving leftovers?
