Thanksgiving is my favorite holiday. The over abundance of food makes it impossible not to love Thanksgiving. But what happens when the holiday is over, and you're left with a refrigerator full of leftovers? One can eat only so many turkey sandwiches.

This year I've rounded up some of my favorite recipes for using up Thanksgiving leftovers in creative and delicious ways.

Turkey Tortilla Soup
Chicken tortilla soup is a family favorite around here. I've never thought of using turkey in place of the chicken in this Mexican-inspired soup.
