On the weekends, gathering around the table for a big breakfast is commonplace in our home. During the week, we are often busy and weeknights can get hectic. Sitting down for dinner as a family isn't always feasible, so we set aside time on the weekends to catch up over breakfast.
The main entree differs. Some Saturdays it's pancakes. Other times it's waffles or eggs. But one thing always remains constant. Potatoes. We always have potatoes, in some form, as a side dish. There are so many different ways to make potatoes for breakfast. From hash browns to potato pancakes to roasted wedges, potatoes are a breakfast favorite for my family.

Over the weekend, I decided to whip up a new recipe and try Tasteful Selections potatoes as part of it. I was hoping the potato recipe would be a big hit. We needed to re-connect as a family since our oldest daughter had been away for a few days on a school trip and my husband had been on a business trip. This family breakfast had to be perfect.
When I make home fries, I usually add diced onion and green peppers. Everyone loves it, but I wanted something similar but different for this breakfast. I decided on three-pepper breakfast potatoes, a twist on traditional home fries.
THREE-PEPPER BREAKFAST POTATOES
Ingredients
6-8 Tasteful Selections Honey Gold potatoes, thinly sliced
1/2 cup red bell pepper, coarsely chopped
1/2 cup yellow bell pepper, coarsely chopped
1/2 tablespoon diced fresh jalapeño
1 tablespoon canola oil, plus 1/2 tablespoon
Kosher salt and freshly ground pepper to taste
Preparation
1. In a large skillet, heat 1 tablespoon of oil over medium heat.
2. Add peppers and sauté until softened, about 8-10 minutes.
3. Add remaining 1/2 tablespoon oil. Add potatoes and cook until potatoes are softened and golden brown around the edges, about 15 minutes.
