Menu Plan Monday :: 11.3.2014

This week's menu plan is somewhat abbreviated. We are leaving for vacation on Thursday morning so this week's meals will be fairly simple to pull together with few ingredients because I don't want to have to do a lot of grocery shopping nor do I want lots of leftovers.

The first night of our vacation will be spent in a hotel room in Fort Myers, Florida. The following Friday through Thursday nights, we have a timeshare at South Seas Resort. It's a condo, so we have a full kitchen. We do cook dinner often since we'd rather go out for breakfast and lunch while we are away.


Here's what we'll be eating this week:

Monday - Chicken, tortilla, and lime soup

Tuesday - Creamy tomato pasta with arugula salad and garlic bread

Wednesday - Black bean, spinach, and cheese quesadillas

Thursday - Eating out.

Friday - Late lunch at the famed The Bubble Room. Look for a review next week. Meanwhile, you can take a peek at the mouth-watering desserts here.

Saturday - Steak on the grill, baked potatoes, roasted asparagus, and a salad.

Sunday - Linguini with marinara (Hubs' own recipe) and a side salad.
