Mandarin Poppy Seed Pancakes

We are gearing up for a spring break that will be a combination of a staycation here in New Jersey and a trip to Hershey, Pennsylvania. One of the things we are counting on is leisurely breakfasts spent lingering over pancakes, bacon, and tall glasses of orange juice (maybe a mimosa for me!).

These mandarin poppy seed pancakes are on my list to make. They look divine!
MANDARIN POPPY SEED PANCAKES

Ingredients
1 cup pancake mix
Water (according to package directions)
4 tsp. poppy seeds
 cup canned mandarin oranges (drained)

Preparation
1. In a large bowl, prepare the pancake mix according to package directions.
2. Add the poppy seeds and mix to incorporate.
3. Fold in mandarin oranges
4. Heat a griddle or skillet over medium-high heat and brush with vegetable oil or spray with a non-stick cooking spray.
4. For each pancake, pour slightly less than 1/4 cup batter onto hot griddle or skillet. Cook 2 to 3 minutes or until bubbles form on top and edges are dry. Flip; cook other side until golden brown.
