I'm looking forward to a normal week. Last week turned out to be somewhat crazy after my neighbor called me in a panic looking for some office help at his acupuncture office. His office manager had to have an emergency appendectomy, and he needed a fill in. Luckily, the Hubs wasn't traveling last week, so I was able to help my neighbor out in a pinch.
The menu plan worked out perfectly last week since I knew I had limited time to shop and cook. I planned ahead each day, and it was seamless. Hoping for a repeat this week.
Here's what's planned for this week:
Monday - Grilled pineapple-chicken foil packets
Tuesday - Steak tacos with lots of guac for Cinco de Mayo
Wednesday - Dinner out
Thursday - Tortellini, bean, and pesto soup with a side salad (Since I have a social media event this evening, I will probably make the soup in the slow cooker).
Friday - Lasagna stuffed peppers
Saturday - Rosemary chicken kebabs with roasted potatoes
Sunday - Grilled turkey burgers with sweet potato fries
