We'll be heading back to New Jersey today from a weekend spent in Pennsylvania visiting family. It's been great not having to cook and prepare meals, but now it's time to get back to reality and healthy eating. I have a few fun salads planned and we're trying two new recipes as well.
Here's what's on the menu board for this week:
Monday - Since it's our first night back and Harper has soccer, it's a good night for takeout.
Tuesday - Shrimp, black beans, and pineapple foil packets
Wednesday - Taco salads
Thursday - Mexican stuffed peppers
Friday - Chicken Caesar pasta salad
Saturday - Grilled shrimp and filet mignon with roasted potatoes and grilled corn
Sunday - Grilled Caprese chicken
