25 Days of Christmas: Day 3 ~ Poinsettia Cocktail

Saturday, December 3, 2011
Rather than set up a full bar for entertaining, I like to mix up a signature cocktail to serve in addition to several beer and wine selections.

You want to enjoy your party and mingle with your guests, not spend the night behind the cocktail shaker.

The Poinsettia Cocktail is the perfect choice for any holiday gathering. Not only is it a crowd pleaser, but it is also super easy to prepare and much of it can be done ahead of time.

This is an adaptation of a recipe I found in one of Emeril's cookbooks. I can't recall exactly which one, but if I remember, I'll post a link to the book.

Ingredients (Recipe can be doubled, tripled, etc. depending on number of people)

1/4 cup vodka
1/2 cup cranberry juice

Crushed ice
1/4 cup Champagne
2 strips orange zest, each about 1/4-inch wide and 2 inches long

Preparation
1.In a large pitcher, mix together vodka and cranberry juice. (This can be done ahead of time and refrigerated until ready to serve.)

2.Fill two champagne flutes with crushed ice. Add champagne to pitcher and pour mixture into prepared glasses. Twist two strips of orange zest over each drink and drop in; serve immediately.

Raise your glasses to a happy and healthy holiday season! Cheers!
